CORN CAKE

  • 1 ½ cup sugar
  • 1 tablespoons butter
  • 3 eggs
  • 1 ¼ cups corn flour
  • 1 ¼ cups flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • ½ cup oil
  • ½ cup grate cheese
Mix the butter with the yokes till gets kind of white. Put together the corn flour, the flour and the baking powder. Add the milk, the oil, and the cheese while you are still mixing. Lastly add the egg whites (already beaten until stiff). Bake in a greased and floured tube pan for about 20-25 minutes.

- I always eat this cake when I get to my grandma's house, but here in Brazil people usually eat it more frequently in June, that's when we have "Festa Junina", a typical party that happens in June at the time of the winter solstice.
